Tasty Thursday! #3

I’m back with another recipe for you! This week we’re baking. Anybody who knows me knows that my baking game is a bit weak. I can cook my ass off, but me and the science of baking are not great friends. If you’ve been keeping up with my blog, then you know I’m a Type 2 diabetic. Like the average person, every now and then I crave something sweet, especially when it’s that time of the month.

Being a novice baker, there’s only a few items that I’ve mastered, mainly the things I love. Sweet potato pie, homemade banana pudding (not the box stuff), and cinnamon rolls. Another one of my favorites is pound cake. I’ve had many failed attempts but my craving this week overtook me, I had no choice. I could hear the pound cake whispering my name, “Jazmine, Jazmine, Jazmine” 😂. My dad makes the most moist and delicious pound cake, but I needed an easy version so I went to the internet, because you can find anything on the internet right? Because I’m a Type 2 diabetic, I have to be creative when “substituting” the things I can’t have in the recipe. Health police, please don’t come for me about my use of sugar substitutes.

Here are the ingredients needed:

• 6 eggs

• 1 cup butter (2 sticks)

• 3 cups sugar

• 3 cups all purpose flour

• 1 cup whipping cream (also known as Heavy Cream)

• 1 teaspoon vanilla

I used cage free eggs and real sweet cream butter because why not! Let me know it’s real ❤️. I used organic unbleached all purpose flour, and Splenda Naturals https://www.splenda.com/sites/splenda_us/files/styles/original_size/public/taco-images/howwedoit.jpg?itok=mXrs3VTX

I made the recipe just as it was written, no deviations other than the substitutions. Every other pound cake attempt was a failure, so I was expecting the same while trying to remain optimistic. My timer went off and I pulled it out. It was beautiful, but so were all the others until I cut into them to find a gummy center, imposters! I sat it on the stove and stared at it until it cooled, well almost. I removed it from the tube pan and cut it (while it was still warm) because I couldn’t wait. I slid the piece out and it was done, no gummy center! I think I might have shed a tear.

Cake has never tasted so good! I ate that piece of cake like it was the last supper, and made sure I got every crumb off of the paper towel 🤷🏽‍♀️ because who needs a plate and fork when no one is watching?
